[ensembl-dev] Updates to FTP site of the new Ensembl website

Hi, 

Please note that the FTP structure for the new Ensembl site has been updated. This change will affect workflows and pipelines pointing to https://ftp.ebi.ac.uk/pub/ensemblorganisms/. 

This directory contains a new README file which explains the new structure, as well as an updated JSON manifest to facilitate searching and access. 

The temporary structure (species name based) will be retired and removed from the site in August 2026. We have continued to dump files in this structure for the latest partial release and will do so for the next three to provide overlap while users rework their pipelines.
